Four Pillars Go the Whole Hog

If you’re a gin fan, you’re going to love what the team at Four Pillars Gin are cooking up. Joining the Australian craft distillery is Melbourne chef and all-round top bloke, Matt Wilkinson.

Matt will be responsible for developing and overseeing all of Four Pillars’ Made from Gin products. He will be creating a menu of goodies that will be available mainly at the distillery for purchase or to enjoy alongside at cocktail at the Healesville HQ.

Made form Gin products in the works include gin pickles, gin cheese biscuits, salt and gin vinegar crisps, gin butter, gin-cured and smoked olives. Matt will also be creating a collection of smallgoods from Four Pillars’ now famous gin pigs: salami, prosciutto, bacon, sausages among other porky things like sausage rolls. He is also throwing around the idea about ginning-up a drunken chicken.

Matt Wilkinson said: “Most people know I love a good martini, but it’s truly amazing how much more you can do with gin and all the great by-products involved. This is one great job description and I just love Four Pillars’ commitment to craft, sustainability and good times.”

Made from Gin is not the first sustainability initiative at Four Pillars. Leading the way is their cult Orange and Breakfast Negroni Marmalade, which is the leftover gin-steamed oranges from each batch of gin.

– Gin Cheese: the stillage (or water from each distillation) goes to local cheesemaker
Jack Holman of Stone and Crow to use in his cheesemaking
– Gin Pigs: spent gin botanicals go to local rare Berkshire pig breeder Brett Ellis at Yarra
Valley Berkshires
– Gin Chocolate: spent botanicals and steamed oranges are made into chocolate by Melbourne outfit, Hunted + Gathered
