The InterContinental Sydney Double Bay is debuting the newest rooftop bar, fittingly entitled Rooftop, and it’s looking to be the ultimate boozy summer afternoon hideout – open only from 12pm til just an hour after sunset. The venue has also recruited renowned mixologist, Grant Collins, to curate its exciting cocktail menu.

Born in the UK and known for his experimental and progressive cocktails, Collins has won numerous international accolades. For the menu, Collins has incorporated fresh locally sourced ingredients with a summer inspiration to create fun spritzes, fizzes and fruit-based concoctions.
Highlights will include the Pink Grapefruit & Blood Orage Spritz, made with Beefeater Gin, house made blood orange sorbet, fresh blood orange and other fresh pressed citrus; and the Rooftop Garden made with gin, Chartreuse, fresh cucumber, mint, pressed apple and elderflower.
Rooftop will officially open this Wednesday the 19th of October 2016, set to be the next ultimate Summer destination.
