Look Inside Archie Rose – A Classic Style Distillery within the Skirt of Sydney

Built and formed as a true ode to Sydney’s rich spirit making past, Archie Rose is setting its sights on shaping the future of distilling in this town.

Located in Rosebery’s thriving precinct The Cannery (for trendsetters and design junkies that’s adjacent to Kitchen by Mike and Koskela), Archie Rose Distilling Co. opened its doors last night to a fully operational distillery and on-site bar.

 

Founded by Sydney-sider Will Edwards, and joined by a seasoned and industry leading team, the inspiration for Archie Rose came from the raw, impassioned Tasmanian distilling trade and the urban distilleries of New York and London.

 

“The City of Sydney once had a thriving local distilling industry and culture,” says Will Edwards. “Archie Rose is our way of honouring that rich history whilst offering Sydney-siders the chance to experience genuine grain to glass spirits production onsite.”

 

With no local distillery to refer to, Will and the team reached out to some of the Australian industry’s top craftsmen including Tasmanian distilling icon Bill Lark, stillmaker Peter Bailly and cooper Adam Bones, who generously shared their skill, passion and commitment to outstanding spirit production.

 

To round out the full experience, the beautifully designed space (created by ACME & Co., whose portfolio includes The Grounds and The Incinerator) is a mixture of grit, polish, and heart. Think Gangs of New York tough, There Will Be Blood extravagance, and Lincoln dignity, basically the holy trinity of Daniel Day Lewis in décor form.

 

Scenery aside, Archie Rose houses an array of custom-made equipment including brushed steel washbacks, oak casks and three purpose-built copper pot stills that were constructed by hand – all earning their keep to currently produce Gin, Vodka and White (unaged) Rye Whisky with a collection of aged whiskies and tailored spirits to follow.ARCHIE ROSE DISTILLERY
