Nestled amidst the picturesque coastal scenery, Stone and Wood Brewery is a haven for beer enthusiasts and those seeking a relaxed atmosphere. As I stepped into the brewery, I was greeted by the inviting aroma of hops and the buzz of excitement from both locals and tourists. The staff members were knowledgeable and passionate about their craft, eagerly sharing insights into the brewing process and the distinct characteristics of their beers.

During the brewery tour, I learned about Stone and Wood’s commitment to sustainability and their use of locally sourced ingredients, which further enhanced the flavors of their brews. The tasting session that followed allowed me to sample a variety of their signature beers, each with its own distinct personality and crafted with meticulous attention to detail. From the refreshing Pacific Ale to the rich and robust Jasper Ale, every sip was a celebration of the region’s brewing heritage.

Continuing my journey through the flavors of Byron Bay, I made my way to Cape Byron Distillery, a hidden gem nestled in the hinterland. The distillery is renowned for producing artisanal gin infused with native Australian botanicals, creating a truly unique taste experience. The picturesque setting, surrounded by lush rainforest, added to the charm of this enchanting place.

The friendly and knowledgeable staff at Cape Byron Distillery guided me through a captivating tour, sharing the story behind their handcrafted spirits and the meticulous process of distillation. The highlight was the tasting session, where I savored the complex and vibrant flavors of their award-winning gins. From the refreshing notes of lemon myrtle to the earthy undertones of native ginger, each sip transported me on a sensory journey through the Australian landscape.

Moving back down into Byron the last stop of the day was a visit to Highwayman Distillery and the chief distiller – Dan Woolley. Dan has been one of the modern faces of whisky over the last ten years, holding one of the most sought-after Whisky ambassador roles in Australia. Throughout this role he travelled countless hours, covered thousands of Highway miles with a bag full of whisky, educating whisky lovers – He was the Highwayman of whisky. This role gave him a backstage pass to globally renown distilleries throughout Scotland (especially Islay), Kentucky, Tasmania and Japan. These journeys developed a deeper, hands on understanding of production and a huge passion for whisky maturation. and now you can visit his distillery and taste some rare release examples of whisky magic. I recommend booking in advance and lining up a masterclass from one of the most knowledgable whisky men in the business.

These experiences not only allowed me to indulge in exceptional libations but also provided insight into the local culture and the rich flavors of Byron Bay. I highly recommend visiting these establishments to anyone seeking an unforgettable blend of nature, hospitality, and culinary delights during their stay in this beautiful coastal paradise.
